This is the recipe I am asked for the most. My sons ask me to make these potatoes often and their friends’ mothers have called to ask for the recipe. One mother said “my son has never asked me to call another mother for a recipe! What are you serving over there?”
This dish is the perfect dinner party or holiday side. I make it earlier in the say and just warm it up before serving. Make extra because it is even better the next day with breakfast.
Ingredients:
marble potatoes. If you can’t find marble potatoes use any smaller potatoes and cut them to large bite size. When possible, I mix red, white, and blue (purple) potatoes.
Chopped white onion. Any type works fabulously. Add as much onion as you like in your life. I like a lot of onions in my life!
Olive oil, grainy dark mustard, chopped garlic, salt and paper for marinade
Topping Ingredients:
4. Grated parmesan cheese
5. Chopped Italian parsley
Create ample marinade of olive oil, mustard, chopped garlic and S and P to taste. Mix in large bowl with potatoes and onions.
Spread on a cookie sheet lined with tin foil.
Bake at 350 until tender
Take out of oven and cover with a layer of cheese and parsley. Cheese will melt on the hot potato mix.
Hide some for extra yourself before serving! These potatoes make amazing leftovers!
